在Ooh Cha Cha的菜單和介紹上常會看到許多熟悉、但又陌生的名詞,如「全食」、「全植物飲食」、「裸食」等,它們到底代表了什麼呢?以下讓我們一一為你說明。

什麼是「全食」?  

我們一直堅持著我們最初理念,所有餐點堅持不使用

✗ 精製油
✗ 白色麵粉及穀類
✗ 化學添加物
✗ 味精

「全食」指的是最接近真正食物原始狀態的食物。未經加工的食物保留了本身最多的營養含量,更重要的是,人們能攝取到該食物完整的營養與各種養份間的自然比例。攝取過多單一維生素或礦物質會造成身體內相對應的其它養份失衡,造成身體更多問題。加工食品為了增減食物的口感或味到,同時延長保存期限,在精製的過程中流失了許多礦物質與維生素,而全食則讓食用者以最天然的方式一次均衡的攝取到多種營養。

 

What is the concept of “whole-foods ?”

Wholefoods are foods that are closest to their natural state. Without processing, the foods contain their maximum capacity of nutrients. This also ensures that we consume the most nutrition available and more importantly in the right proportions. Nutrients work together in the body to keep us healthy and functioning. It is not about isolating one vitamin or mineral to ensure our health, but rather the interaction between them. Whole foods contain a wide variety of nutrients in one food, guaranteeing a balanced diet. When food is refined or processed, many of the vitamins and minerals are removed as consequence of processing or to ensure a longer shelf life.

生活週遭有什麼食物是屬於全食呢 ?

全食泛指所有未經加工的水果和蔬菜;全穀類如小米、糙米、燕麥、裸麥、全麥、蕎麥、藜麥等;豆類與豆夾、堅果、種子等。

What are some examples of “whole-foods ?”

Wholefoods include unprocessed fruits and vegetables; whole-grains, such as millet, brown rice, oats, rye, whole-wheat, buckwheat, and quinoa, beans and legumes, and nuts and seeds.


什麼是「全植物飲食」?

「全植物飲食」如同其名,指的是以盡量未經加工的植物為食的飲食形態。那這和不食用動物性奶、蛋、肉品的「全素(Vegan)」飲食有什麼不同呢?就要吃的健康來說,Vegan和其他飲食型態一樣可以是不健康的飲食方式。一個吃Vegan的人如果常食用素肉、精製糖、麵粉等加工食品,他一樣是吃全素,但他的食物中營養比例卻是大大低於全植物飲食者。

舉例來說,像是薯條、Oreos餅乾、汽水等都是符合「全素」的標準,但食物中的養份也在高度加工的過程中消失殆盡了,高度加工的糖份和油脂讓血糖快速升高,造成胰臟許多負擔,分泌大量的胰島素去平衡血糖,快速降低的血糖讓人突然感覺空虛而吃下更多的食物。近期也有許多研究發現全食、全植物飲食能降低心血管、癌症等疾病的發生。

What is a plant-based diet ?

Why not just use the term vegan? In terms of health, a vegan diet, just like any other diet can be unhealthy. A vegan diet reliant on faux-processed meats, refined flours and refined sugars would not be nutritionally dense, but would fall well within the standards of a vegan diet, which refrains from partaking in animal products or by-products. The term plant-based means just as the name suggests, a diet rich in whole, plant foods.

For example, french fries, Oreos, and soda could viably compose a vegan diet. However, all these foods are highly processed and devoid of nutritional value. Recently, numerous studies have found links between whole food, plant-based diets and a reduction in chronic disease, such as heart disease and different types of cancer.


「裸食」是什麼 ?

所謂裸食(raw food)是指烹調過程未超過攝氏47度的食物。裸食奉行者認為天然食物的酵素、維生素、礦物質等養份,經過高溫烹煮後會消失或大大減低,使酵素無法達到促進消化與對抗心血管疾病的作用,因此選擇用低溫烹煮的方式,減少食物變質的可能。

當然,大自然中也有部分養份是需要溫度才能被人體吸收的,如蕃茄的茄紅素。因此正確認識各種食物與最適當的烹調方式是很重要的。

What is raw food ?

Food that is not heated over 47 degrees Celsius. The belief is that enzymes are destroyed during the cooking process, as well as vitamins and minerals. Enzymes aid in digestion and fight chronic disease.


全植物飲食還有什麼好處呢 ?

全植物飲食不止增進了個人健康,更降低了生產食物對整體大環境的影響,也為抑制現今不仁道工業牲畜養殖方式盡一份心力。

加州大學柏克萊分校教授及多本食物研究作者 – 麥可.波倫(Michael Pollan)在他的「食物無罪:揭穿營養學神話,找回吃的樂趣! (In Defense of Food: An Eater’s Manifesto) 」一書中到:「吃真正的食物;不要過度飲食;以植物為主要飲食。」這為全植物飲食下了最簡單易懂的註解。

Are there other benefits ?

It may start out as an endeavor in individual health, but a whole-food, plant-based diet is good for the environment and all the animals effected by the cruel and inhumane modern factory farming techniques.

UC Berkeley professor and food writer Michael Pollan put it best in his book In Defense of Food: An Eater’s Manifesto, “Eat food. Not too much. Mostly Plants.”
